One of the casual teas that is offered at Ippodo is Mugicha. Mugicha is special in that it is actually made from barley, not tea leaves. Ippodo uses a high quality barley, and roasts it at high temperatures. The result is a rich roasted aroma, a unique barley flavor, and a slightly sweet aftertaste.

Often made in large batches, Mugicha is especially popular in summer in Japan.

Bring about 500 ml (17 oz) of water to the boil in a small kettle or saucepan, then add 15 g (0.5 oz) of barley.

Bring back to the boil, then turn off the heat.

Leave to brew for 30 minutes.
Remove the barley when the tea reaches the desired strength.

Bring the water to a boil, then add about 50 g (1.7 oz) of barley to the kettle for each 2 liters (2 qt) of water. Turn off the heat and leave to brew for 30 minutes. That's all.

Mugicha is suitable for drinking either hot or iced.
And when the tea has cooled down, you can always reheat it in a microwave.
